<p>The Signature Cabernet Sauvignon has been our flagship wine for more than three decades. It is a benchmark for the long-lived hillside wines of the Napa Valley; full of structure and ageing potential, yet seductively forward in its concentrated varietal character. The dry, rocky soils of Pritchard Hill produce small, intensely flavorful grapes. <p>Tasting Notes:<br />
Cinnamon and cocoa scents mingle with the aromas of black cherry, blackberry, and toasty oak. Robust flavors of espresso and red and black fruits layer deep into the core of this delicious wine. Elegant tannins round into the firm backbone of the wine, while an impression of bittersweet chocolate hangs gently on the aftertaste.</p>
<p>Vineyard Notes:<br />
A dry, warm spring in 2007 resulted in early budding, bloom, and set up on Pritchard Hill. The summer growing season was decidedly on the mild-to-cool side with few heat spikes. There was an initial flurry of harvest activity around Labor Day, but then temperatures cooled, which allowed picking to proceed at an even pace.</p>

<p>Vineyards-</p>
<p>    * Grand Estates Cabernet Sauvignon was harvested from vineyards located predominantly on the Horse Heaven Hills (which contributes texture and body) and the Wahluke Slope (for aromatics and complexity.)<br />
    * Columbia Valley vineyards are seated east of the Cascade Mountain range. Up to 14,000 feet high, the mountains effectively block eastward-moving wet weather systems from the Pacific Ocean.<br />
    * Just 6 to 8 inches of rainfall reach the growing region annually. Vineyards are 100% drip irrigated.<br />
    * The soils have low fertility and low water-holding capacity, allowing precise control of vine growth patterns.<br />
    * Vines are planted north to south on south and southeast-facing slopes.<br />

<p>A blend of 86% Cabernet Sauvignon, 12% Cabernet Franc, and the rest Petit Verdot, the 2004 Cabernet Sauvignon Reserve, which mostly comes from To-Kalon, has a relatively small production in this vintage (7,500 cases). The wine has a dense purple color and a wonderful, sweet, almost St.-Julien like nose of licorice, red and black currants, cedar, and spice. Medium to full-bodied, elegant, but authoritatively flavored, this wine is still young, rich, and very fine. </p>

<p>Ex-Libris is a latin term for &#8220;from the library,&#8221; and was the guiding principal for this proprietary project. Through connections with some top wineries in Washington and California, we were able to go into their vaults and secure some superlative lots of wine from top vineyards. The goal of the project is to produce wines that drink like $30-$40 bottles, but sell for $20.<span id="more-175"></span></p>
<p>The 2007 is an amazing vintage in Washington state and it really reflects in the wine. The 2007 blend includes an amazing piece from Sheridan Vineyard, which is one of the great new sites in Washington made famous by Andrew Will’s single vineyard bottling. </p>
